Even though my mom’s favorite seasonings were salt and pepper she had her specialties that were out of this world . I always knew when my dad pulled out the huge cast iron hand grinder that could only mean one thing, Sloppy Joes. Yes, none of that canned stuff for us and dad’s job was to grind up the green pepper and onion. That was one of my favorite dishes. Years later my mom went more high tech and used the blender for her green pepper and onion but it still tasted the same. I always wondered why she ground up the vegetables and she told me my brother wouldn’t eat anything he saw an onion in so this was her way of hiding it. It wasn’t until I asked mom if I could make them myself that I found out how easy and quick they really are.
- 1 1/2 lbs ground beef
- 1 medium green pepper
- 1 medium onion
- 3/4-1 cup ketchup (I start with 3/4 cups and taste adding more if needed. Calories were calculated using 1 cup)
- 2-3 tblsp sugar ( usually use 2 but calculated the calories with 3)
- 3 tblsp vinegar
- 3 tblsp mustard
- 1 tsp salt (optional – I only use a dash)
Brown ground beef and drain.
Chop onion and green pepper (my mom used a grinder or blender but you can chop them by hand if you prefer, flavor’s still the same)
Add 3/4 cup ketchup and rest of ingredients
cook uncovered on low for 20 minutes
Taste and add more ketchup if needed
These are great the first day but even better the next
1/4 cup = 79 calories
